Ode to Kale

Why do I love you,

kale

all curly

and nutritionally dense?

  • Kale eases lung congestion and is beneficial to the stomach, liver and immune system
  • Kale contains lutein and zeaxanthin, which protect the eyes from macular degeneration
  • Kale also contains indole-3-carbinol, which may protect against colon cancer
  • Kale is an excellent source of calcium, iron, vitamins A and C, and chlorophyll

I long to wear a bikini

only of kale

and stand in the store window

all day long

displaying like the

queen of kale herself,

all the amazing properties of kale.

Kale, my beloved,

you are the queen of all dark greens

and we are lucky to

have you on the planet.

Whether juiced,

sauteed in olive oil with chopped

fresh garlic,

or minced in soups

or stirfrys,

YUM

If only people would

wake up

and realize

you are the true medicine,

the food that cures

all.

    I got a nice chuckle out of this one. And of the image of someone wearing a kale bikini in a shop window. You might be on to something there for the ‘kale marketing board’ if there is such a thing. 🙂
